I like how on the main page, the "schedule an appointment" button stands out and it is easily accessible. If I am going on a clinic's website, I do not want to be looking around to figure out where I can book an appointment.

Is this a typo? If I am reading this correctly, the statement is that it is difficult to find undermodified malt (i.e. barley which has a high carbohydrate content with a highly resistant protein/gum matrix) that requires extended protein rest during the mashing process. This sounds contradictory since the undermodified malt requires additional enzymatic breakdown according to the previous paragraph.
