It has become increasingly difficult to find truly undermodified malt that requires extensive protein rests as part of the mashing schedule.
Is this a typo? If I am reading this correctly, the statement is that it is difficult to find undermodified malt (i.e. barley which has a high carbohydrate content with a highly resistant protein/gum matrix) that requires extended protein rest during the mashing process. This sounds contradictory since the undermodified malt requires additional enzymatic breakdown according to the previous paragraph.
